So, I was just inspired to thinking about old classics that either could or should get a make over and get a new life. With FFVII on the way, it's success could pave the way for older games that could benefit from the remake. Now, I'm not calling for a full remake of all the classics. Just some that could or definitely would be even greater than the originals should they go under the modern day graphics and game play knife.
So what is at the top of my list?
Xenogears.
If there is a game that should be remade it's Xenogears. Such a grand and engaging story with a unique game style, it was a fantastic game only brought low by the fact that the company ran out of money and ended up shitting the bed with the back half of the game. Xenogears never came to life as it should have the first time around, so I firmly believe a remake that allowed the game to be presented as it was always intended would possibly put it as one of the greatest RPGs of all time.
I could probably go into more detail, but since this idea just popped into my head, my thoughts have not fully formed.
So with the option to come back and explain and possibly defend my choice, I open the floor to anyone else who has ideas on the subject matter.

If we aren't restricted to RPGs....
Doom!
The new Doom that was released in 2016 took everything that was fun about the original Doom -- which I even recently bought on the PS4 -- and mixed that up with just about the right amount of more modern gameplay elements. The upgrade systems, mostly, but also the way the game seamlessly integrated its story into the game without breaking up the speed that made it so fun. My only real complaint is that it could stand to be a bit more varied when it comes to the places you go to, but that's a fairly minor complaint. I'm really looking forward to Doom Eternal.

Before I talk of my choice...
On the subject of Xenogears, I personally think the gap between Xenogears and Xenosaga should be filled first, and there's enough material to draw from: The last flight of the Eldridge, the creation of Deus, the Eldridge crash and birth of Miang, and ending with the rise of Emperor Cain and Solaris. (Of course, they should probably also fix the crap out of Xenosaga 2, but that's just me.)
As for Xenogears itself, I agree whole-heartedly. The problem is that MonolothSoft holds the key to all other things Xeno, while Square keeps the rights to Gears. The only way a remake is going to work is if both companies can either reach a consensus on who owns what or that they can work together...
...which considering how badly Square's venture with CyberConnect2 for FFVII: Remake turned out, chances are not too good.

Okay, now anybody who's known me longer than a month can pretty much guess what I want remade.
Chrono Trigger.
Imagine Trigger with Dragon Quest XI styled graphics. If there's any series that needs more love, it's Chrono.
However, try as I might to deny it, Chrono Cross is a part of the series, so it should be remade as well. Like Xenogears, Cross too suffered from 'Disc 2 Syndrome', with an overly lengthly sub-quest shoehorned into the main quest, endgame arc fatigue with loads and loads and LOADS of infodumps, shitty pacing all throughout, and a disjointed ending that would make Gainax proud. Also, way too many characters for a console RPG. I'm honestly convinced that Kato wanted to make a mobile game instead...
Oh wait.
The biggest problem of all is that there was supposed to be a third game to finish off the series, but Masato Kato, in all his INBRED FUCKING WISDOM, decided there was no point and basically torched the franchise and ran. The Chrono series is now in a state of semi-permanent limbo, its story unfinished.
I. CAN'T. STAND. UNFINISHED. STORIES.
If I had my way, all that would be needed is the introduction of a single new character that will bridge the two games and help to resolve most dangling plot threads.
But yeah. Trigger and Cross. Remake them both. Connect them better. And for god's sake, give the series a stisfying conclusion.

I'd be curious to see how Ecco and Tides of Time could be done in full 3-D style, a la Defender of the Future. Especially with more realism showing the immense beauty of the seas and Atlantis... ooh, if it would be close to Eternal Ocean... Granted, I was never very good at ANY of them, but it can be fun turning off the air requirement and just swimming around, too.
But please, please keep the Sega CD soundtrack, NOT the Genesis one. The Sega CD soundtrack is one of my favorite albums of all time, and compared to that, the Genesis one sounds like supermarket music.

This is a hard one for me because I typically like original versions and feel that many remakes ruin something. Graphics, characters, gameplay, something always gets left on the chopping block that shouldn't be. So my take on this is not, what was good and deserves a remake, but what had potential? What could only get better no matter what they changed. How could any of us not want to see Lunar: Dragon Song actually have a chance. Granted they would need a rewrite akin to TSS -> SSSC level, but a good rewrite, done on a console (say the switch), with real music/songs, voice acting, changing the battle system to more traditional, and elimination of those stupid delivery fetch quests for money.
I wouldn't mind a remake of Lunar Magic School either. Not that the translated rom is bad, but same reasons as L:DS.

If there's any series that needs more love, it's Chrono. Oooh, good one. I'd be all for this too. However... I strongly disagree with this. Chrono Cross can go eat a big bag of dicks. Honestly, I think they should rather remake the ORIGINAL version of Chrono Trigger without that stupid tacked-on ending segment that grimdarked the whole thing. Full disclosure: I have played Chrono Trigger to completion several times. I have not completed Cross even once, not even to the point where I got to the infamous plot twist I've heard so much about. I don't care that it's a part of the official canon; if they can remake the ending of Chrono Trigger to fit in this heap of rubbish, they can unmake it so it doesn't exist again. That would make me happy.

I could say the first three Persona games (as in the first game and both parts EP and IS of Persona 2, that is), would benefit from the changes game-handling wise that were present from Persona 3 on. I know that it would be worth it from a fan's perspective; they ported the first Persona with new music (which was great) but other than unlocking the other storyline that was left out of the first version brought over here, they didn't really change anything of substance.
Another candidate would be the earlier games in the Shining series, including Shining in the Darkness and the Shining Force games (yes, I'm including all of 3 and the one from the Sega CD era as well). It would certainly give more life to the characters other than the standard pitch changed chirp they employed in place of voices. SitD especially would benefit from the graphical upgrade capabilities because it was sometimes difficult to trick your eyes into seeing things in the proper perspective for a first person dungeon crawler.
...I wouldn't mind seeing a version of the Shining games and the first Persona game made with a female leader as well, but unless they would be willing to do it properly, with different reactions/corresponding character differences I'd rather they not bother.
The first four Phantasy Stars. Can you just see how much room for development there is here? Especially if they demolished number 3 and rebuilt it from the ground up, so to speak by giving some of the characters and marriage candidates in general more fleshing out (no double entendre intended here, seriously).
