I've never tried specific gaming challenges, but this was a cool one to watch. (I usually go with two fighters, one red mage, and one white mage.)

While I have no doubt it's possible, it sounds unpleasant to do. I remember powerleveling Hugh in Phantasy Star II just because he was my favorite character, but he doesn't have the strongest physical attacks or damage spells, so while it was doable to have him solo the final dungeon for a few fights (and as he leveled, adding more fights to each run) it wasn't great. At least until I leveled him high enough to get Savol, which is an instant kill attack for all living targets of the chosen monster type. Savol could miss sometimes, so it wasn't total cheese, but did make the grinding easier.
I can't imagine doing the same with Amy, the designated healer character and probably the closest thing to a white mage.

That sure takes some dedication (out right bloody minded stubborness) to deal with. When I did the original FF, I went with Red, Black, White Mage and either a Thief or a Fighter. Because buying magic/weaponry made a lot more sense to me than relying too much on consumables especially considering how much of a sinkhole certain dungeons could be when it came to needing your heals. Or was that just because of my long standing habit of taking things on with as little grinding as possible? ...Unless I manage to get lost. ^^;
I probably wouldn't do that kind of challenge myself unless it was a character that I was really attached to or, in the case of games with differing playstyles for each one, playstyles that I'm really comfortable with. I almost completely soloed P5 Strikers with Joker not because of his ability to switch Personas, but because I liked how he handled under DW style combat.
